Voxteen, first of all, I applaud you for your honesty.
That if you become a Christian, its only because of her and it would be fake and you dont want to do it. Being a Christian is a decision and a personal relationship with God. You should never do it for another person, because you would then be lying to yourself and to God.
Please see attach bible passage. Yes, Christians are not to marry non-christians. There are differences in beliefs and way of life which may not be apparent now but will be in future and this will lead to conflicts in a marriage. Hence, knowing this, the girl has tried to tell you that it would be impossible and would rather not even start a relationship with a non-believer.
If you really like her, perhaps you can consider going to church and finding out more about Christianity and getting to know God and entering into a personal relationship with God first?

Paul wasn't talking about getting married here, otherwise he will be contrdicting himself. He said if you have a spouse who is not a Christian, that means you probably became a Christian after you got married, don't use Christianity as an excuse to divorce your spouse.

In the uneven yoke verse, is there any hint of marriages? The verse merely shows that Christianity is imcompatible with paganism.
The time when Paul speaks about marriage, he goes to tell that marriage with an unbeliever can sanctify him/her.
And if he was talking about marraige here, then I must be blind as there are numerous terms such as spouse, husband, wife etc.
Then again, your theology (not your intepretation of Holy Writ) might be right as Catholics are generally discouraged from marrying non-christians and christian heretics such as marcionites, arians and protestants.

You are right in that the verse does not apply to marriage alone. For example it can be applied to setting up a business with a non-Christian. In all these situations, compatibility is critical to success. Unless your faith in God is just something you add on to your life, ie it is not an integral part of your life, you will end up having a lot of conflict with your non-Christian partner.

Precisely.
The question is on the practicality of adminsitering the sacrament of marriage to a mixed mirrage with a disparity of cult (even in inter-denominational marriages) rather than the efficacy of the sacramanent if it was administered to a mixed marriage.
This brings me back to my point that no where in Scripture does St Paul question the efficacy of a mixed marriage...he may have questioned its practicality though. Hence it is alright to date a non-christian if the practicalites woes will not affect you.
A stricter intepretation could be that one is only allowed to marry another from his OWN denomination as other denominations are contradictory and conflicting. However this is not the case as Holy Writ never questioned the validity of a mixed marriage but only its practicality and since most christians can find a compromise, its ill-effects are hardly seen.
Hence mixed marriage is alright!
